Serving Size: Recipe makes 24 mini muffins
Time: 5 minutes prep, 30 minutes cooking, 35 minutes total
INGREDIENTS
- 1 pound Grass Run Farms® grass-fed ground beef
- 1 packet of taco seasoning
- 2 boxes of cornbread muffin mix
- 2 large eggs
- 2/3 cup low-fat or skim milk
- 1 cup shredded Mexican cheese blend
- 1/2 cup of sweet corn
INSTRUCTIONS
Step 1:
Brown the ground beef and add taco seasoning. After the beef has cooked thoroughly (about 5 - 7 minutes), remove it from the pan. Preheat oven to 350°F.
Step 2:
Prepare muffin batter according to package directions with eggs and milk. Strain the corn from the can and fold ground beef and sweet corn into the muffin batter.
Step 3:
Spray 24 mini-muffin cups with nonstick cooking spray. Divide muffin batter evenly among 24 mini muffin cups, filling the cup to the top.
Step 4:
Top batter evenly with cheese. Bake for 15 to 20 minutes or until the muffins have cooked through and the cheese is melted and golden brown.
