- 1 lb Ground Turkey
- ¼ cup breadcrumbs
- ¼ cup grated Parmesan (plus extra for serving)
- 2 garlic cloves, minced (divided)
- 2 Tbsp chopped parsley
- 1 egg
- Salt & pepper
- 4 cups chicken or turkey broth
- 2 Tbsp olive oil
- 1 small onion, finely chopped
- 1½ cups Arborio rice
- ½ cup white wine (optional)
- 3 cups baby spinach
- 2 Tbsp butter
Instructions
- Mix Ground Turkey, breadcrumbs, Parmesan, one garlic clove, parsley, egg, salt, and pepper in a mixing bowl. Form small meatballs. Bake or broil at 425°F until browned and cooked (8–10 min).
- Warm the broth in a pot and keep it on low heat.
- In a large pan, heat olive oil. Cook the onion and 1 garlic clove until soft. Stir in rice and cook for 1 min. Add wine (if using) and stir until absorbed.
- Add broth 1 cup at a time, stirring often until liquid is absorbed before adding more. Continue until rice is creamy and tender (about 18–20 min).
- Stir in butter, Parmesan, and spinach until wilted. Season with salt and pepper.
- Spoon risotto into bowls and top with turkey meatballs and extra Parmesan.
