  • Market House Beef Short Ribs are USDA Choice graded, which is the second-highest USDA Grade on the USDA Grading Scale. USDA Choice beef contains high amounts of marbling resulting in an extremely tender texture.

  • Each order is packed with dry ice so that it stays completely frozen while en route to your doorstep.

How To Prepare

  • Thaw your short ribs in the refrigerator overnight (8-12 hours) before cooking. To speed up the thawing process, place the vacuum-sealed short ribs in a leak-proof plastic bag and submerge it in cold water.

  • How to Smoke: Season short ribs with salt, pepper, and your preferred rub. Smoke at 200-250°F until they reach 165°F. Wrap in butcher paper and continue cooking until they hit 200°F.

  • How to Braise: Season short ribs with salt, pepper, and your preferred seasonings. Sear in a cast iron skillet until crust forms. Preheat oven to 350°F, then braise in a dutch oven with 2-3 cups of liquid (water, beef stock/broth, or red wine) for 3-4 hours, until they reach 190-200°F.

  • Note: Consuming raw or undercooked beef may increase your risk of foodborne illness.

Our favorite way to prepare short ribs is to braise them. Season each rib with salt, pepper, and your desired seasonings on all sides. Sear each rib in a cast iron skillet until all sides form a crust. Next, preheat your oven to 350°F. Place the seared short ribs in a dutch oven with 2-3 cups of braising liquid (water, beef stock, beef broth, or red wine), and roast for 3-4 hours until the short ribs reach an internal temperature of 190-200°F.
