Enjoy tender steak, creamy blue cheese, and fresh vegetables, all tucked inside a perfectly toasted ciabatta or French baguette. It’s a flavorful, satisfying sandwich that can easily be whipped up for lunch or dinner.

Ingredients 

  • 1 Pound of Sirloin or Boneless Ribeye 

  • 4 ciabatta rolls or French baguettes

  • 1/2 cup crumbled blue cheese

  • 1 small onion, thinly sliced

  • 1 tablespoon olive oil

  • 1/2 cup arugula or mixed greens

  • 2 tablespoons mayonnaise (optional)

  • Salt and pepper, to taste

  • 1 tablespoon balsamic glaze (optional for extra flavor)

Instructions 

Prepare the vegetables

  1. In a small skillet, heat olive oil over medium heat. 

  2. Add the thinly sliced onion and sauté for 5-7 minutes until they become soft and caramelized. 

  3. Set aside.

Slice the Steak:

  1. If you’re using leftover steak, slice it thinly against the grain. 

  2. If you're cooking fresh steak, season it with salt and pepper, cook it to your preferred level of doneness, and let it rest before slicing thinly.

Assemble the Sandwiches

  1. Slice the ciabatta rolls or French baguettes and toast them lightly under the broiler or in a skillet for a few minutes. 

  2. Spread a thin layer of mayonnaise (optional) on the bottom of the rolls, then layer with the sliced steak.

  3. Top the steak with crumbled blue cheese, sautéed onions, and a handful of arugula or mixed greens.

  4. Drizzle with balsamic glaze for extra sweetness and flavor, if desired.

  5. Close the sandwich and serve immediately, allowing the creamy blue cheese to melt slightly into the warm steak.
