4 Boneless Skinless Chicken Thighs or 1 lb Ground Beef Brick (85/15)

4 large tortillas

1 bell pepper, sliced

1 cup shredded mozzarella cheese

1 cup shredded gruyere

2 tablespoons high heat oil

Salt and pepper to taste
Instructions:

Preheat your flat top grill to medium heat.

Season your chosen protein with salt and pepper. Cook on the grill until fully cooked, then remove from the heat and let rest.
