1 cup shredded gruyere

2 tablespoons high heat oil

Salt and pepper to taste
Instructions
-
Preheat your flat top grill to medium heat.
-
Season your chosen protein with salt and pepper. Cook on the grill until fully cooked, then remove from the heat and let rest.

If using Boneless, Skinless Chicken Thighs, cook on the grill until an internal temperature of 165°F is reached, and shred your chicken using two forks.

If using a Ground Beef Brick, cook until the meat is brown and an internal temperature of 160°F is reached.

While your protein is cooking, add your preferred high-heat oil to another area of your flat top before sautéing sliced bell pepper and onion until they are tender and caramelized.

Place a tortilla on the grill and top half of it with your shredded cheese, grilled chicken or ground beef, and sautéed veggies.
-
Fold the empty side of the tortilla over the ingredients and flatten it with a spatula.
