Ingredients

For the Jalapeño Poppers:

  • 12 fresh jalapeño peppers
  • 12 slices of bacon
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

 

For the Taco Filling:

  • 1/2 pound ground beef
  • 1/2 packet of taco seasoning mix
  • 1/4 cup diced onion
  • 1/4 cup diced tomatoes
  • 1/4 cup diced bell peppers

 

 

Instructions

1. Prepare the Jalapeño Peppers

  • Wash and dry the jalapeño peppers.
  • Slice each jalapeño in half lengthwise, and remove the seeds and membranes. You can wear disposable gloves to protect your hands from the spicy oils.
 

2. Make the Taco Filling

  • In a skillet, cook the ground beef over medium heat until browned and cooked through.
  • Stir in the taco seasoning mix and prepare according to the package instructions.
  • Add diced onions, tomatoes, and bell peppers to the taco meat. Cook for an additional 2-3 minutes to heat through.
  • Remove from heat and set the taco filling aside.
 

3. Prepare the Cream Cheese Mixture

  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, ground cumin, chili powder, garlic powder, salt, and black pepper. Mix until well combined.
 

4. Assemble the Jalapeño Poppers

  • Take a jalapeño half and fill it with the cream cheese mixture, then top it with a spoonful of the taco filling.
 

5. Wrap with Bacon

  • Wrap each stuffed jalapeño half with a slice of bacon, securing it with toothpicks if needed.
 

6. Cook the Jalapeño Poppers

  • Bake the jalapeño poppers for approximately 20-25 minutes at 375°F (190°C), or until the bacon is crispy and the peppers are tender.
 

7. Serve and Enjoy

  • Carefully remove the toothpicks, and serve your delicious bacon-wrapped, taco-stuffed jalapeño poppers while they’re still hot!
