  • 1 lb Grass Run Farms Chuck Arm Roast, cut into 1-inch cubes
  • 1 Tbsp olive oil
  • 3 cloves garlic
  • ¾ cup beef broth
  • 8 oz can of diced green chiles
  • 1 cup green enchilada sauce
  • 5 10” flour tortillas



  1. In a large skillet with a tight-fitting lid, heat olive oil over medium heat. Add garlic and cook 1-2 minutes until fragrant and golden.
  2. Add beef chuck arm roast pieces and beef broth. Bring to a boil then reduce heat to low and simmer for 6-8 hours until meat is tender.
  3. Shred meat in a pot. Add chiles, enchilada sauce, salt, and pepper to taste.
  4. Increase heat to medium high and simmer 8-10 minutes until sauce is reduced and thickened.
  5. Heat tortillas and fill with beef mixture. Roll and serve.
