Ingredients
- 1 lb Grass Run Farms Chuck Arm Roast, cut into 1-inch cubes
- 1 Tbsp olive oil
- 3 cloves garlic
- ¾ cup beef broth
- 8 oz can of diced green chiles
- 1 cup green enchilada sauce
- 5 10” flour tortillas
Directions
- In a large skillet with a tight-fitting lid, heat olive oil over medium heat. Add garlic and cook 1-2 minutes until fragrant and golden.
- Add beef chuck arm roast pieces and beef broth. Bring to a boil then reduce heat to low and simmer for 6-8 hours until meat is tender.
- Shred meat in a pot. Add chiles, enchilada sauce, salt, and pepper to taste.
- Increase heat to medium high and simmer 8-10 minutes until sauce is reduced and thickened.
- Heat tortillas and fill with beef mixture. Roll and serve.
